Marinated Tomatoes & Carrots
This is great pared with cashew cream, but would also be good on its own or on crostini as a bruchetta.
Ingredients

- Tomatoes
- Carrots
Marinade
- 1 garlic clove, peeled + finely chopped or grated
- 2 tbsp balsamic vinegar
- 1/8 red onion, very finely chopped
- 1 small handful of fresh basil, finely chopped
- 1 lemon, juice only
- olive oil
- salt + pepper
Instructions
- Slice tomatoes in half-inch slices.
- Peel carrots with a vegetable peeler to get fine ribbons.
- Make marinade
- Place tomatoes in wide dish. Spoon marinade over tomatoes.
- Mix all together and pour about half over carrots in bowl. Mix to coat.
- Serve alone or with cashew cream and/or on good bread.
